Ultimate Broccoli Casserole

Okay.  Maybe the name is a bit much, but this really is good!  Plus, it's not just your usual broccoli casserole.  This recipe came about probably 7 years ago.  My mother gave me her recipe, which I promptly served up for my husband of 2 years (at the time).  He gave it a huge thumbs down- mostly due to the cream of mushroom that was in it.  I was determined to figure out a recipe that he would like.  This is the way we like it the best.

Ingredients
Base
Frozen Broccoli (desired amount for an 8x8 dish)
6 sharp cheddar Kraft singles
1 can Cream of Chicken
1/3 can milk

Topping
3/4 stick of butter
1 package Ritz Crackers

Directions


Base
Steam desired amount of frozen broccoli 8 to 10 min.  (I like to have a LOT of broccoli in this dish when I make it.  Adjust as you like, but make sure it will all fit in the dish.)
Take broccoli out of pan and pour out the water used for steaming.  Return the broccoli to the hot pan and add cream of chicken and milk.  (Use cream of chicken can and eyeball the 1/3.)
Mix these together until well blended.  Pour into an 8x8 baking dish.
Place sharp cheddar cheese singles over the top of broccoli mixture and set dish to the side.
Topping
Melt 3/4 of a stick (6 Tbls) of butter in a microwave safe bowl.  Crumble one package of Ritz crackers into melted butter and mix well with a fork.  Spread over the top of casserole base.
Bake casserole in the oven at 350* for 20 min and topping is nicely browned.  Serve and enjoy!


This is by no means a low fat or low calorie dish.  But, nothing says you have to serve it every night....  Even though you may want to.  :)
